About the dish

A tangy cold soup that cools the heat. Oi-naengguk is julienned cucumber in a tangy chilled broth, eaten cold. Crisp cucumber and refreshing broth make it a summer-table regular for beating the heat.

Cucumber (oi) — its strong diuretic action aids wellness and reduces swelling; brightens and moisturizes skin and helps support wellness around skin damage, good for beauty and dieting; supports gut health through hydration; rich in vitamins. In season May; mainly from Pyeongtaek.

Main: cucumber, onion, seaweed (optional), cold water · Seasoning: vinegar, sugar, soy sauce, minced garlic, chili powder, sesame

Simple recipe

  1. Julienne the cucumber.
  2. Dissolve soy sauce, vinegar and sugar in cold water for a tangy broth.
  3. Add the cucumber.
  4. Add minced garlic and chili powder.
  5. Float ice and serve refreshingly cold.
