About the dish

Eel raised where the sea breeze blows. The pungcheon in pungcheon-jangeo is not a place name but means where river meets sea and the tidal wind blows; the Gochang area is famous for it. Grilled in seasoning, it is a classic tonic dish.

Key ingredient

Eel (jangeo) — a high-protein fish especially known for boosting men's stamina; though high in calories and fat, its unsaturated fats keep cholesterol from building up in the vessels; rich in mucin protein and collagen. In season August; mainly from the South Coast.

Ingredients

Main: eel, scallion, ginger, garlic · Seasoning: gochujang or soy-sauce marinade, corn syrup, sancho pepper

Simple recipe

  1. Clean the eel and butterfly it open.
  2. Pre-grill to render off the fat.
  3. Brush on gochujang or soy-sauce marinade.
  4. Grill over charcoal, basting with the marinade.
  5. Garnish with ginger strips and serve.
