About the dish

Croaker is a prized fish that restores strength through the dog days of summer, enjoyed raw from its flesh down to its swim bladder and skin. It was counted among the finest summer restoratives of the noble households.

Key ingredient

Croaker (mineo) — a prized fish for summer stamina meals; quality protein and unsaturated fats help restore energy, and even the swim bladder and skin are rich in collagen. Summer season, mainly from Sinan & Mokpo.

Ingredients

Main: croaker flesh, swim bladder and skin, julienned radish, perilla leaves · Seasoning: vinegared gochujang, doenjang, mugeunji (aged kimchi)

Simple recipe

  1. Clean the croaker and break it down by part.
  2. Slice the flesh, swim bladder and skin separately.
  3. Arrange them on a plate by color.
  4. Set out sesame-oil and vinegared gochujang dips.
  5. Serve as a restorative summer raw-fish platter.
