About the dish

Bajirak-kalguksu boils knife-cut noodles in a refreshing broth of clams purged of their grit. Drawing on the west coast's plentiful bajirak, it is a light, clean noodle dish that leaves you feeling refreshed.

Key ingredient

Littleneck clams (bajirak) — rich in taurine and iron, good against anemia and good for the liver; lean, high in protein and delicate, with vitamin B12 to support the nerves. Spring season, mainly from the west coast.

Ingredients

Main: kalguksu noodles, littleneck clams, zucchini, potato, carrot, scallion · Seasoning: minced garlic, soup soy sauce, salt

Simple recipe

  1. Purge the clams of sand and make an anchovy-kelp broth.
  2. Add the clams and lift them out once they open.
  3. Add the kalguksu noodles and cook.
  4. Add the zucchini, potato and minced garlic.
  5. Return the clams, season with soup soy sauce and serve.
