About the dish

Memilmuk-bap is a bowl of rice and slivered buckwheat jelly submerged in chilled broth. The clean-tasting muk and bracing cold soup make it a beloved specialty of Gangwon-do.

Key ingredient

Buckwheat (memil) — kind to skin and waistline, and credited with warding off high blood pressure; it supports the liver against hangovers, acts as a diuretic and helps the pancreas keep insulin flowing. In season in October, mainly from Jeju.

Ingredients

Main: memilmuk (buckwheat jelly), rice, kimchi, anchovy-kelp broth, gim, scallion · Seasoning: soy sauce, gochugaru, sesame oil

Simple recipe

  1. Slice the buckwheat jelly into thick strips.
  2. Chill the anchovy-kelp broth.
  3. Put the rice and jelly in a bowl.
  4. Pour over the cold broth.
  5. Top with kimchi, crushed gim and sesame seeds and serve.
