Clear clam soup, briny and clean
Jogaetang is a clear soup of Manila clams or other shellfish, prized for a broth so clean and refreshing it seems to reset the palate. It is the sea's most companionable pot — as welcome for curing a hangover as for accompanying a round of drinks.
Manila clams (bajirak) — rich in taurine and iron, good for the liver and for supporting healthy iron levels; lean, high in protein and clean-tasting, with vitamin B12 for healthy nerves. In season in spring, mainly from the west coast.
