Hobak bujim, pumpkin fritters, fry mature pumpkin in oil — which actually helps the body absorb its carotene, so it tastes good and nourishes at once. A homey treat for Baekjung, the farmers' midsummer rest day.

Korean squash / pumpkin (aehobak & old pumpkin) — easy to digest and good for indigestion; aids circulation and insulin, and its beta-carotene helps help maintain healthy cholesterol levels and blood pressure. Peak in July, nationwide.

Ingredients

Main: mature pumpkin, wheat flour, perilla or cooking oil · Seasoning: salt

Simple recipe

  1. Peel and seed the pumpkin and grate it.
  2. Mix pumpkin and flour at about 1:2 with a little water and salt into a batter.
  3. Pan-fry ladlefuls in oil until golden.
