About the dish

Bulgogi carries centuries of history, from the ancient skewered maekjeok through seoryamyeokjeok — meat sought out and grilled on snowy nights — to the refined neobiani. In today's hallyu era it is one of the dishes foreign visitors most want to eat in Korea, a country that, unlike most, cooks not only the lean beef but the bones and innards besides.

Key ingredient

Beef — top-quality protein and essential amino acids for building muscle and stamina; iron and zinc guard against anemia and bolster immunity, and B vitamins help shake off fatigue. In season year-round, mainly from Hoengseong & Hongcheon.

Ingredients

Main: beef, pine mushrooms, onion, scallion · Seasoning: soy sauce, sugar, pear juice, minced garlic, sesame oil

Simple recipe

  1. Marinate the beef briefly in the soy seasoning.
  2. Tear the pine mushrooms into thick strips along the grain.
  3. Grill the beef on a heated grill pan.
  4. Add the mushrooms and cook just until their fragrance blooms.
  5. Serve at once while the pine-mushroom aroma is alive.
