Salt-roasted large prawns
Daeha sogeum-gui could not be simpler: large prawns roasted in a pan over a bed of coarse salt. The salt locks in the prawns' moisture and natural sweetness, leaving them clean-tasting and nutty.
Shrimp (saeu) — known as a stamina food that fortifies energy and the kidneys; its glycine calms an alert brain, so shrimp at dinner can even help you sleep. In season in September, mainly from the West Sea.
Main: daeha (large prawns), coarse salt · Seasoning: vinegared gochujang (on the side)
Uirimsoju (Jecheonhanyak(yeong), North Chungcheong) — a distilled soju at 40% ABV, chosen to pair with today's dish.
