About the dish

Daeha sogeum-gui could not be simpler: large prawns roasted in a pan over a bed of coarse salt. The salt locks in the prawns' moisture and natural sweetness, leaving them clean-tasting and nutty.

Key ingredient

Shrimp (saeu) — known as a stamina food that fortifies energy and the kidneys; its glycine calms an alert brain, so shrimp at dinner can even help you sleep. In season in September, mainly from the West Sea.

Ingredients

Main: daeha (large prawns), coarse salt · Seasoning: vinegared gochujang (on the side)

Simple recipe

  1. Spread coarse salt over a pan.
  2. Lay the prawns on the salt.
  3. Cover and roast.
  4. Turn them once they blush red.
  5. Serve whole with the vinegared gochujang.
