About the dish

Prized as a food that stokes yang energy, daeha — king prawns — are the giants of the shrimp family, measuring 25 cm and more. Every October the festival in their honor takes over Taean County in Chungcheongnam-do.

Key ingredient

Shrimp (saeu) — long known as a stamina food that builds vitality and strengthens the kidneys; its glycine settles the brain's arousal, so shrimp in the evening can help bring sound sleep. September season, mainly from the West Sea.

Ingredients

Main: large prawns (daeha), cheongju (rice wine), scallion, ginger · Seasoning: salt, vinegar soy sauce

Simple recipe

  1. Clean and trim the prawns.
  2. Season lightly with cheongju and salt.
  3. Steam them in a steamer over rolling steam.
  4. Take them out once they turn red.
  5. Serve simply with the vinegared dipping sauce.
