About the dish

Goguma mattang is a snack of deep-fried sweet potato glossed with sugar syrup, at once sweet and crisp. Long adored as a children's treat and a snack-bar standby, it is an endearing, old-fashioned nibble.

Key ingredient

Sweet potato (goguma) — abundant fiber keeps the bowels moving and wards off constipation, while potassium sweeps out sodium to help keep blood pressure in balance. In season in September, mainly from Yeongam in Jeollanam-do.

Ingredients

Main: sweet potato, cooking oil, black sesame seeds · Seasoning: sugar, rice syrup

Simple recipe

  1. Cut the sweet potatoes into bite-size pieces.
  2. Deep-fry them until golden.
  3. Boil the sugar and rice syrup down to a syrup.
  4. Toss the fried sweet potatoes in it.
  5. Sprinkle with sesame seeds, let cool and serve.
