About the dish

Jeonju hanjeongsik grew out of the fertile Honam plains and their wealth of ingredients. Dozens of dishes — bean sprout soup, savory jeon, yukhoe and more — crowd the table until its legs all but bend, a spread that remains the pride of Jeonju.

Key ingredient

Hanjeongsik (Korean full-course table) — a spread built on seasonal ingredients that delivers well-rounded nutrition; vegetables, seafood and fermented foods in balance, the essence of Korea's refined dining culture. Enjoyed in all seasons, above all in the Namdo region.

Ingredients

Main: rice, bean sprout soup, jeon (savory pancakes), yukhoe (beef tartare), namul (seasoned greens), jeotgal (salted seafood), hangwa (traditional sweets) · Seasoning: gochujang, soy sauce, sesame oil

Simple recipe

  1. Prepare the bean sprouts, jeon, namul, yukhoe and other dishes.
  2. Arrange the many side dishes on small plates.
  3. Add the soup and rice alongside.
  4. Lay everything out generously on the table.
  5. Serve as a full Jeonju-style spread.
