About the dish

Andong gan-godeungeo began as a way to move mackerel inland without spoiling, salting it on the long road to Andong, far from the sea. Grilled up salty and savory, the cured fish is a regional dish carrying the preservation wisdom of the interior.

Key ingredient

Mackerel (godeungeo) — its omega-3 EPA widens blood vessels, discourages clotting and is traditionally believed to help maintain healthy blood pressure and cholesterol; abundant DHA spurs young brains along and helps guard adults against dementia. October season, caught all along the Korean coast.

Ingredients

Main: salted mackerel, radish (optional) · Seasoning: salt

Simple recipe

  1. Open the salted mackerel out flat.
  2. Pat away the moisture.
  3. Grill on a grate or pan, skin side first.
  4. Flip and cook until golden.
  5. Serve the salty grilled fish with rice.
