About the dish

Heotjesatbap is Andong's 'mock memorial-rite meal': namul, soup and jeon laid out as for an ancestral rite, then mixed into rice with soy sauce. Legend has it that Confucian scholars who missed the taste of ritual food would stage a rite without an occasion, just for the pleasure of eating afterward.

Key ingredient

Seasonal greens (namul) — wild and field greens in season deliver fiber, vitamins and minerals; low in calories, good for the gut, with antioxidants that firm up immunity. Available year-round from mountain areas nationwide.

Ingredients

Main: rice, namul (fernbrake, bellflower root, spinach), tangguk (clear soup), jeon, gim · Seasoning: soy sauce, sesame oil, sesame seeds

Simple recipe

  1. Season the ritual namul of fernbrake, bellflower root and spinach.
  2. Prepare the tangguk and jeon.
  3. Arrange the namul over the rice.
  4. Mix with soy sauce.
  5. Serve Andong-style with the soup and jeon alongside.
