About the dish

Mul-makguksu is buckwheat makguksu served swimming in an ice-cold broth, best of all with a float of slushy ice on top. It is the delicacy that once cooled Gangwon-do's summers.

Key ingredient

Buckwheat (memil) — a friend to skin and diet, and a help against hypertension and lifestyle diseases; supports liver function to ease hangovers, acts as a diuretic and smooths the pancreas's insulin secretion. October season, mainly from Jeju.

Ingredients

Main: buckwheat noodles, broth, cucumber, radish salad, egg, gim · Seasoning: vinegar, sugar, mustard, soy sauce

Simple recipe

  1. Cook the buckwheat noodles and rinse them.
  2. Pour over cold broth, dongchimi brine or meat stock.
  3. Top with cucumber, radish strips and boiled egg.
  4. Offer vinegar and mustard alongside.
  5. Serve icy cold with slushy ice floating on top.
