Ganggyeong Jeotgal Samhap

강경젓갈삼합
Gang-gyeong Jeot-gal Sam-hap

Salted-seafood trio (Ganggyeong Festival)

About the dish

Ganggyeong jeotgal samhap wraps an assortment of salted seafood with boiled pork and well-aged kimchi into a single mouthful. It is a regional showcase for Ganggyeong, once the great hub of the jeotgal trade, and the depth of flavor its fermented pantry can deliver.

Key ingredient

Salted fermented seafood (jeotgal) — fermentation multiplies its amino acids and umami; it offers calcium, protein and gut-friendly microbes, though its saltiness calls for moderation. Available year-round, mainly from Ganggyeong & the west coast.

Ingredients

Main: assorted jeotgal, suyuk (boiled pork), mugeunji (aged kimchi) · Seasoning: dipping sauce

Simple recipe

  1. Set out small portions of several jeotgal.
  2. Boil the pork and slice it thin.
  3. Ready the aged kimchi.
  4. Wrap jeotgal, pork and kimchi together.
  5. Serve as a Ganggyeong-style samhap.
