About the dish

Hoengseong hanu is Korea's celebrated beef, raised in the clean highlands of Gangwon. Its fine marbling and tender texture make it one of the country's most prized cattle — best grilled simply.

Beef (sogogi) — quality protein and amino acids for muscle and stamina; iron and zinc for immunity, B vitamins for fatigue. Year-round, the prized Hoengseong region.

Main: Hoengseong hanu beef, garlic, scallion · Seasoning: salt, sesame-oil dip, ssamjang

Simple recipe

1. Slice the hanu sirloin along the grain.
2. Let it rest at room temperature.
3. Sear hot so only the surface browns.
4. Cook to medium to keep the juices.
5. Serve with salt and sesame-oil dip.
