Braised half-dried pollack with radish
Kodari is pollack dried only halfway, which leaves the flesh with a satisfying chew that stands up beautifully to braising. Simmered down spicy with radish and potato, kodari-jorim is a much-loved companion to a bowl of rice.
Pollack (myeongtae) — the fish to reach for with a cold, a flagging appetite or sluggish digestion; excellent for hangover relief, liver health and flushing waste, with sulfur amino acids that help lower blood cholesterol. In season in January, mainly from Sokcho.
