About the dish

Yeonggwang gulbi jeongsik is a set table laid around gulbi, the famed dried yellow croaker of Beopseongpo, ringed with an array of side dishes. Cured in the sea wind, Yeonggwang gulbi carries the deep flavor that makes this the signature spread of the Namdo region.

Key ingredient

Yellow croaker (jogi) — easily digested protein well suited to the elderly and convalescent; rich in calcium and phosphorus for strong bones, with plentiful vitamins to restore energy. In season in spring, mainly from Yeonggwang & Chujado.

Main: Yeonggwang gulbi (dried yellow croaker), rice, kimchi, seasoned greens (namul) · Seasoning: seasoning sauce, gochujang

Simple recipe

  1. Lightly grill the gulbi and flake the flesh from the bones.
  2. Lay out rice and an assortment of side dishes.
  3. Arrange the gulbi on a plate.
  4. Add gochujang and wrapping greens alongside.
  5. Serve as a complete set meal.
