Pan-braised tofu in spicy soy sauce

About the dish

Dubu jorim is pan-seared tofu braised down in a soy sauce seasoning until the flavor soaks through — homey, familiar cooking that everyone loves. Rich in protein, it holds a dependable place on the Korean table.

Key ingredient

Tofu (dubu) — soybean protein at its most concentrated and digestible; isoflavones help ease menopause symptoms and guard against osteoporosis, all in a low-calorie, high-protein package. Made year-round, famously in Gangneung (Chodang).

Main: tofu, scallion, cheongyang chili · Seasoning: soy sauce, gochugaru, minced garlic, sugar, sesame oil

Simple recipe

  1. Cut the tofu into thick slices and sear on both sides.
  2. Mix a sauce of soy sauce, gochugaru and minced garlic.
  3. Layer the tofu in a pan and pour over the sauce and water.
  4. Braise until the liquid is nearly gone.
  5. Scatter with scallion and sesame seeds to serve.
