About the dish

Chicken gizzards, prized for their springy chew, have long been a favorite companion to drinks. Stir-fried hot and spicy with vegetables, dak-ttongjip bokkeum is a standing specialty of Korea's beer halls.

Key ingredient

Chicken (dakgogi) — lean, easily digested quality protein, ideal for recovery and restorative meals; methionine and essential amino acids support liver function and immunity, and vitamin A keeps skin and mucous membranes healthy. Good all year round (a summer restorative), raised nationwide.

Ingredients

Main: chicken gizzards, onion, cheongyang chili, scallion, garlic · Seasoning: soy sauce, gochugaru, minced garlic, pepper

Simple recipe

  1. Clean the gizzards and blanch them.
  2. Make a seasoning of gochugaru and minced garlic.
  3. Stir-fry the onion and scallion over high heat.
  4. Add the gizzards and seasoning and toss quickly.
  5. Finish with perilla leaves and a drizzle of sesame oil.
