About the dish

Bindaetteok earned its name as the food of the poor, though its charms are anything but humble. Beneath the green husk the mung bean glows as yellow as a newborn chick, and once soaked, ground on a millstone and fried, it becomes a pancake fragrant enough to stop passersby in their tracks.

Key ingredient

Mung bean (nokdu) — excellent at cooling and supporting, bringing down heat and swelling; rich in protein and essential amino acids, it also calms troubled skin and eases hangovers. In season in autumn, grown nationwide.

Ingredients

Main: hulled mung beans, pork, mung bean sprouts, fernbrake (gosari), kimchi, scallion · Seasoning: salt, minced garlic, cooking oil

Simple recipe

  1. Grind the soaked mung beans into a batter.
  2. Mix in the pork, mung bean sprouts and kimchi.
  3. Ladle the batter into a generously oiled pan.
  4. Fry until the edges are crisp.
  5. Serve with vinegar-soy dipping sauce.
