About the dish

In Mungyeong, North Gyeongsang, pigs raised on feed mixed with powdered yakdol — the local elvan stone — are grilled as yakdol dwaeji gui. With little gaminess and a springy, chewy bite, it ranks as Mungyeong's signature local dish.

Key ingredient

Pork (dwaejigogi) — about ten times the vitamin B1 of beef, excellent for fatigue recovery and energy metabolism; quality protein and methionine help protect and support the liver, and unsaturated fatty acids lower blood cholesterol. Enjoyed year-round, mainly from Jeju & the Jirisan area.

Ingredients

Main: pork neck, onion, scallion · Seasoning: gochujang, soy sauce, minced garlic, ginger, green-plum syrup

Simple recipe

  1. Marinate the pork in the yakdol (elvan) seasoning.
  2. Let it rest 30 minutes so the marinade soaks in.
  3. Grill on a hot rack until golden.
  4. Turn as it cooks so it does not burn.
  5. Serve with wrapping greens and shredded scallion.
