About the dish

Seokhwa gui is oysters roasted in the shell and eaten the moment the shells gape open — the rich aroma of a just-roasted oyster is unbeatable. It is a convivial winter treat of the coast, when oysters are at their peak.

Key ingredient

Oysters (gul) — low in calories and fat yet rich in calcium, a favorite for light eating; iron and copper help support healthy iron levels, while taurine is traditionally believed to help maintain healthy cholesterol and blood pressure. In season in February, mainly from Goseong.

Main: oysters in the shell · Seasoning: chogochujang (vinegared gochujang), lemon

Simple recipe

  1. Wash the oysters in their shells thoroughly.
  2. Set them on a grill pan or grate.
  3. Roast until the shells open.
  4. Pry them open and lift out the meat.
  5. Serve with the vinegared gochujang and lemon.
