About the dish

Spring flounder enjoyed sliced bone and all. Sekkosi is small fish sliced fine bone and all; made with plump spring flounder it is nutty and chewy. It is enjoyed on the South Coast as a delicacy that announces spring.

Key ingredient

Fine flounder (dodari) — a lean, easily digested spring white fish; essential amino acids aid recovery and growth; low-fat and high-protein. In season spring; mainly from the South Sea and Tongyeong.

Ingredients

Main: fine flounder, perilla leaves, lettuce, radish strips, garlic · Seasoning: cho-gochujang, doenjang

Simple recipe

  1. Clean the flounder, bone and all.
  2. Slice fine into sekkosi.
  3. Lay down the vegetables.
  4. Plate the slices.
  5. Serve with cho-gochujang as a spring delicacy.
