Deep-fried seaweed-wrapped noodle rolls

About the dish

Gimmari rolls a filling of glass noodles in gim and deep-fries it crisp — better still dunked in tteokbokki sauce. It is the fritter that defines Korea's snack shops, crunchy and comfortingly familiar.

Key ingredient

Glass noodles (dangmyeon) — made from sweet-potato and potato starch, springy yet easy to digest; almost fat-free and mild, they give hearty body to japchae and hot pots. Available year-round, produced nationwide.

Ingredients

Main: gim, dangmyeon (glass noodles), carrot, garlic chives, onion, frying mix · Seasoning: salt, soy sauce

Simple recipe

  1. Soak the glass noodles, season them and stir-fry with the vegetables.
  2. Roll the noodle filling up tightly in sheets of gim.
  3. Coat the rolls in batter.
  4. Deep-fry at 170°C until crisp.
  5. Serve with tteokbokki sauce or soy sauce.
